Being entirely honest, I personally don't really like realism. I tried it with my alt, and while it was good fun, ultimately it was hard to immerse myself in it. I think it is in general, in servers that aren't geared for realism. We're a fantasy server, last I checked, and there's no shortage of the fantastical elements of the server. However, we still incorporate elements of realism, and real life. The nonsensical doesn't apply: usually if something happens, there is indepth lore and reasoning behind it.

At any rate, that ramble aside, here's some resources I like. They're all videos and the like, reading from primary medieval/Renaissance sources not being a frequent hobby of mine. Can't find any online, for one thing.

In order of my personal preference:

I like this guy. He seems to know his stuff, while still being charismatic and nice to listen to. I'm pretty sure all of his videos are focused around the sort of arms and armor discussion of things.

This dude's pretty great, too. Rather funny.

This guy only has videos about armor and some music if you go about a year back in his catalog, as far as I can tell. Incredibly informative, though I don't much like listening to him.

There's some more folk around, I'm sure, but these fellows are my favorites. I've had lots of inspiration for my characters from them, and the first two have well over a hundred videos dedicated to the topic.
